Cornersmith duo are Two Good’s COTM this February

Cornersmith is a family run business founded on a desire to build community through ethical food choices, education and sustainable business practice. For the past 14 years, Cornersmith owner Alex Elliott-Howery and Cooking School coordinator Jaimee Edwards (known affectionately as the Cornersmith duo) have devoted their lives to teaching people traditional cooking skills through their cooking school, cookbooks (of which there are now three) and much loved Annandale cafe in Sydney’s Inner West.

Their friendship was forged over their love of food and cooking, as well as their shared dedication to reducing food waste. Cornersmith’s recipes have a focus on locally sourced, seasonal produce with a focus on reducing waste, which has inspired the menu that Alex and Jaimee have created for Two Good. Alex and Jaimee believe that sharing food is a gesture of love and care, and kitchens are places for enrichment, activism, and positive change – values shared by Two Good – which is what makes them the perfect fit for Two Good’s COTM program.  

Through the Chef of the Month (COTM) program, social enterprise Two Good partners with top chefs who create delicious menus that are cooked and served at their cafe in Darlinghurst’s Yirranma Place, and are also available to purchase through their catering service. All proceeds from the sales will help at-risk women affected by domestic violence, homelessness and trauma find employment. 

Alex and Jaimee’s menu for Two Good includes a Panzanella Salad; Creamed Jalapeno Sweetcorn & Cheese Toastie with Chilli Jam; and Pineapple & Coconut Cake with Lime Drizzle, available throughout February: 

  • Panzanella Salad – this is the perfect recipe to make the most of leftover bread (one of the most wasted foods in Australia). Panzanella is a classic example of resourceful and seasonal cooking and this one is a celebration of summer’s harvest: tomatoes and roasted capsicum, with the crunch of bread too good to throw away!
  • Creamed Jalapeno Sweetcorn & Cheese Toastie with Chilli Jam – corn is one of summer’s gifts and this toastie is pure sunshine. Creamy and decadent with a hint of heat. 
  • Pineapple & Coconut Cake with Lime Drizzle – this gluten free treat does not compromise on flavour or texture. It also uses a whole pineapple, so there’s no waste.
