LILYMU, a Parramatta Square institution part of ESCA Group, proudly announces the appointment of their new Head Chef, Roy Park. Renowned for his ability to blend Asian flavours with creative flair, Chef Roy Park brings a diverse background to LILYMU, drawing inspiration from Korean, Japanese and Thai cuisines.

Banksii Vermouth Bar. Known for his dynamic approach to cooking, Chef Roy Park is committed to
sustainability and prioritises quality ingredients and minimising waste, while transforming each dish into

Under Chef Roy Park’s guidance, LILYMU introduces a reimagined menu. Highlights include hokkaido
scallop with red nahm jim, ginger, and kaffir lime; kiwami wagyu rump steak with galbi emulsion and
sambal; cauliflower with almond miso and gochujang; and green curry mussels with tomatoes and flat
bread.
