Madame Pearl quickly recognized Chef Olivier as one of the most gifted chefs of his generation. Her first taste of his talent came several years ago during one of her many trips to Hong Kong, where Chef Olivier was Executive Chef at L’Atelier de Joel Robuchon, the Michelin three-star French fine-dining restaurant.
Later, when she was staying at The St. Regis Hong Kong (following in the footsteps of her A-list friends, including the Astor Family), she was sipping a Bloody Mary at The St. Regis Bar when she saw Chef Olivier again – now Culinary Director at L”Envol, the Michelin two-star establishment which has redefined French gastronomy.From that moment, Madame Pearl knew she must tempt Chef Olivier to her mansion. And finally, she has succeeded!
Now, Chef Olivier is delighting guests at Pink Pearl, the gorgeous beachfront restaurant, with his creative French-Mediterranean cuisine. His meticulously crafted new menu emphasizes the timeless flavors of France’s Côte d’Azur, infused with authentic local elements – perfectly showcased in signature dishes such as locally-sourced bonito, cooked over charcoal and served with an endive salad, comté cheese and vierge sauce, and his classic Bohémienne which elevates the traditional Provençal-style dish of eggplant, tomato and parmesan. This mesmerizing menu is paired with fine wines, curated by Master Sommelier Bertrand Lutaud. A professional taster and judge who has worked in several Michelin-starred establishments, Bertrand excels in complementing Chef Olivier’s cuisine with vintages from the leading vineyards in France and around the world.
In the spirit of Lamarck University, Chef Olivier’s arrival will mark the launch of the “Department of French Cuisine” at JW Marriott Phu Quoc Emerald Bay Resort & Spa, bringing the grace and glamor of the French Riviera to Phu Quoc. He has also unveiled Pink Pearl’s new Sunday Brunch, which is staged every weekend and features an amazing array of culinary delights, all crafted using natural and seasonal produce from local farms and fishing communities, as well as premium ingredients imported directly from France’s top suppliers.
