No Fuss Cooking-The Latest from Sydney Seafood School

Welcome back to Sydney Seafood School for 2025. It’s going to be a big year for us with some wonderful guest presenters already lined up and the completion of the new Sydney Fish Market – and with it a stunning new Sydney Seafood School  by the end of the year.

NO FUSS COOKING

For me, the warm summer months are all about no-fuss cooking and easy entertaining – and seafood is your best friend for both.

On high rotation in my kitchen right now are teriyaki tuna poke bowls, barbecued fish fillets and Asian-inspired seafood salads. I’ve also been working my way through the Salads, Sides and Basics chapter of our new cookbook, A Fish for All Seasons. It’s amazing how easy it is to turn a simple piece of grilled fish into something more impressive with a flavoured mayo or two and a few well chosen salads.

If you want to explore our cookbook more book into one of our Summer of Seafood classes. These classes are short and sweet: you’ll learn to cook and get to eat a dish or two from the book and you’ll take home a copy as well.

And don’t forget that sometimes the best cooking is no cooking at all. Our The Raw and the Cured class – which focusses on sashimi-style seafood and includes some glorious recipes but no cooking – is testament to this fact. It’s fast becoming our most popular class.

WHO’S COOKING?

One of my favourite Christmas gifts was Julia Busuttil Nishimura’s new cookbook, Good Cooking Every Day. The much-loved Melbourne-based cook, author and presenter has a huge following for her easy, tasty dishes that nod to her Maltese heritage and the time she’s spent eating, travelling and cooking in Italy.

I am thrilled to reveal that Julia will be presenting her very first masterclass at Sydney Seafood School, inspired by her new book, in our autumn program.

Before then, we’ve got some Middle Eastern masterclass magic with Kepos Street Kitchen’s Michael Rantissi on 30 January, a Mexican fiesta with Rosa Cienfuegos on 28 February, and the uber-talented Karen Martini returning on 15 March.

KIDS IN THE KITCHEN

Our kids’ cooking classes, back later this month, include Sushi on 22 January and Dumplings on 29 January. These classes are always a lot of fun but they fill up quickly so make sure you book in early!
